A few words from the Proprietors – Brian & Sandra Hatcher.
We are the proprietors of the Axe & Compasses in Braughing and have been working in the catering industry for many years. Perhaps you share our belief that many years of mass production and distribution of foodstuffs has resulted in poor appreciation of the value of good locally grown produce, meat and dairy products. To counteract this, we have introduced our great passion for fresh local foods into our restaurant and catering businesses and are gratified by recent trends back to the basics of freshly prepared, well-balanced and wholesome, healthy meals.
Upon taking ownership of the Axe and Compasses (in 2000), we implanted our philosophy of purchasing ingredients from local producers and preparing meals and menus which take the customers’ dietary needs into account, i.e.: diabetes, blood pressure and food allergies etc. Myself and our trained chefs prepare all our dishes (starters, mains and deserts) on the premises using only the highest quality ingredients. Each day we secure fresh fish, meat, bread, dairy products and produce. We bake fresh white and brown bread daily; make our very own tar tar & horseradish sauce and ice-cream weekly. Our chips are hand cut and served with the skin, Furthermore, we customise the menu each season to reflect the availability of seasonal, locally sourced produce in order to offer traditional fare alongside innovative and creative dishes. This imparts better quality and price that is offered to the customer. Our efforts have been recognized and we have been awarded Trip Advisor Excellence Award 2017, 2106 & 2015
We are committed to constant improvement and persistently seek to find and add local suppliers. Our enviable location in the Hertfordshire countryside encourages us to take advantage of the freshest produce possible and regularly create new dishes so we can continue to offer you, our guest, an exceptional dining experience.
Our staff can offer additional information about our dishes. We can offer a very good selection of wines and award beers to complement your meal. The premise date to the 16th century and is set in the beautiful Roman village of Braughing. The area is rich in natural beauty and history and is a favorite of ramblers and cyclists. We offer an elevated beer garden with a small, informal outside bar. Our garden overlooks the local cricket ground
In summary, we offer a high-quality, customer-focused, catering service based on locally sourced ingredients and freshly prepared meals and work collaboratively with our customers to assure their needs are met.
